Instant Pot Lobster Risotto

I’m a huge fan of risotto but it is so tedious and time-consuming having to stir and stir and stir. You can still get a great texture by cooking it in the instant pot and you don’t even have to keep an eye on it! If you don’t want to break the bank by using lobster you can have this plain and it’s just as good! Let me know what you think!

Instant Pot Oxtail Lo Mein

I randomly came across some oxtail at the Vons by my house so I had to buy it! Prior to making this recipe, I had never tried it let alone cooked it! I knew it would turn out super tender if I just popped it in the Instant Pot for a little!

Check out the recipe!

Veggie Frittata…With Bacon

Personally, I find it hard for myself to make a recipe without meat, especially when it comes to a breakfast without bacon. BUTTTTT, this recipe is still really delicious…even without the bacon! I love frittatas because they’re versatile and you can pretty much fill them with whatever leftover veggies you have in your fridge. They’re also great because you can keep them in the fridge for 5-7 days or freeze them for 2-3 months and reheat them easily for a quick breakfast.  Check out the recipe!

Lemon Ricotta Pancakes

I stole this recipe from Bobby Flay and will never make a normal pancake again! First of all, I’m not a huge pancake lover but these completely changed the game for me. These pancakes will impress any guest and are perfect for holiday breakfast and brunches or any occasion for that matter. The only thing I did differently from Bobby was add a little maple syrup to the lemon curd to make it a thinner consistency. You have to try these! See the recipe below

Miso Glazed Chicken

This recipe is absolutely delicious and is amazing served on a bed of rice with vegetables. White miso is hard to come across at a regular grocery store so your best bet is to try an Asian market near you!
